Potato Sorting

To begin, potatoes are sorted according to specifications; wafer potatoes should be big oval in form, disease-free, and completely grown. It should have the fewest amount of eyes possible to reduce losses via pruning.

Cleaning and Peeling

The potatoes are then properly cleaned in water and peeled by hand with a stainless steel peeler or by using an abrasive potato peeling machine, with the skin rinsed away with water sprays. The potatoes are then submerged in water to avoid browning.

After peeling, they are cut into thin slices that are 0.4 to 0.5 cm thick using a slicing machine.

After that, the slices are submerged in cold water. To prevent oxidation, the slices are maintained in water containing 0.05 percent potassium meta bi-sulfate if the following step is delayed.

After slicing, the potato slices are blanched in boiling water for 3 to 5 minutes before being spread out on trays. The batch is then transported to frying after the irregular slices are removed.

Frying and drying

The blanched potato slices are next dried using a spin drier or a hydro extractor to eliminate any excess moisture. They are then cooked for 3-4 minutes in a deep fat fryer at 1900 degrees Celsius. It's then placed on a sieve to cool and drain any extra oil.

Flavors are added once it has cooled. Salt, spices, and other seasonings are sprayed on the chips according to taste using salting drums.

Finally, using vacuum sealing equipment, the chips are wrapped in a plastic bag and placed in cardboard boxes before being sent to customers.

It can even be sold as soon as it has been blanched and dried. Customers are free to cook it whenever they like. The unfried chips have a longer shelf life than the fried chips. The flavours and spices are applied after blanching but before drying in this method.
